homemade funfetti cookies
(inspired by this post)

preheat oven to 375 degrees (F)

1 cup softened, salted butter
1 1/4 cups sugar
3 teaspoons vanilla extract
1 egg
2 1/2 cups cake flour
1/4 cup cornstarch
3/4 teaspoons baking soda
1/4 cup blue and white jimmie sprinkles
1/4 cup blue and red star sprinkles
2 tablespoons red and white nonpareil sprinkles

cream the butter and sugar in your mixer for two minutes, until fluffy. add the vanilla and egg.
mix until well combined.

in a separate bowl, sift in the flour, cornstarch, and baking soda.
slowly add the flour mixture to the butter mixture, and continue on low speed until it’s all added and combined.

mix in the sprinkles, but don’t over-mix or the sprinkles will start to bleed into the dough.

using an ice cream scoop, scoop cookie dough onto cookie sheets, about 1 1/2 inches apart.

bake for about ten minutes, or until slightly golden.

cool on a wire rack.
store in an airtight container up to four days.

makes approximately three dozen cookies.
